The French version of the Witbier recipe :

  • Color : Pale yellow (7EBC)
  • Alcohol content : 5.3%.
  • Quantity : 20L
  • Bitterness : 20IBU
  • Difficulty : Medium

Ingredients

Brew our French Wit Beer recipe step by step

Step 1

Heat 15.6 liters of water to 71.2°C, then add the crushed grains, flakes, and rice hulls.

Note: Do not confuse rice hulls, used here to aid filtration, with rice flakes, which are not part of this recipe.

Stir thoroughly to avoid lumps and bring the temperature down to around 45-50°C. Maintain this temperature for 15 minutes.

Step 2

Raise the temperature to 66°C and hold it there for one hour. Meanwhile, heat 15.1 liters of sparge water to 75°C.

Step 3

After the hour of saccharification, proceed with lautering and sparging.

Step 4

Boil the wort for 60 minutes. At the start of the timer, add 35 g of Strisslespalt hops for infusion. If you are using an immersion chiller, sterilize it in the wort 15 minutes before the end of the boil. Add the orange peels and lightly crushed coriander seeds 5 minutes before the end.

Step 5

Cool the wort to 20°C and transfer it into a fermenter, remembering to add the yeast. The initial gravity should be around 1.046. Ferment at 19°C for about 3 weeks. To ensure the fermentation is complete, raise the temperature to 21-22°C during the last 4 days. The final gravity with this yeast should be around 1.006.

Step 6

Incorporate 6 to 7 g/L of sugar during bottling. Carbonation should be relatively strong for this white beer recipe.
