Si le mois de mars est synonyme de retour du printemps, chez Rolling Beers<\/a> il signifie surtout le retour des malts Crisp ! Apr\u00e8s plusieurs mois d’absence, les malts anglais de chez Crisp reviennent enfin en France. Maris Otter extra pale, Amber malt, Brown malt, Naked oats… Tous font leur retour. Et comme si c’\u00e9tait pas suffisant, on a d\u00e9cid\u00e9 d’ajouter pas mal de nouveaut\u00e9s malt\u00e9es du catalogue Crisp ! <\/p>\n\n\n\n

La malterie Crisp<\/h2>\n\n\n\n

Consid\u00e9r\u00e9 comme le meilleur fournisseur de malt du Royaume-Uni, Crisp produit du malt de brassage depuis 1870. Install\u00e9e dans le comt\u00e9 de Norfolk \u00e0 Great Ryburgh, cette malterie produit aujourd’hui 425 000 tonnes de malt par an. <\/p>\n\n\n\n

En plus d’un maltage \u00ab\u00a0standard\u00a0\u00bb rapide et similaire aux autres malteries, Crisp propose \u00e9galement un maltage traditionnel. Depuis peu, Crisp a cr\u00e9\u00e9 la gamme \u00ab\u00a0Heritage\u00a0\u00bb. En fait, elle reprend le maltage original des fr\u00e8res Smith, cr\u00e9ateurs de la malterie. A l’\u00e9poque, le malt \u00e9tait fait au sol. Il \u00e9tait ensuite pass\u00e9 dans un four traditionnel \u00e0 temp\u00e9rature douce pendant 3 jours. Ce processus conf\u00e8re un gout plus profond au malt. <\/p>\n\n\n\n

Du classique dans un premier temps <\/h3>\n\n\n\n

Si vous voulez brasser 100% anglais, ce sera d\u00e9sormais possible car les \u00e9quivalents de certains malts Weyermann font leur entr\u00e9e chez nous. <\/p>\n\n\n\n

Pour un bon porter traditionnel, on pourra compter dans nos rayons le Black malt (1350 EBC), le Chocolate malt (1000 EBC) et le roasted barley unmalted (1350 EBC). Un petit nouveau, sans \u00e9quivalent, fait \u00e9galement son entr\u00e9e, le Low colour chocolate malt (500 EBC). Il conf\u00e8re un ar\u00f4me de chocolat d\u00e9licat et n\u2019a pas l\u2019astringence des malts plus fonc\u00e9s.<\/p>\n\n\n\n

Cot\u00e9 malt caramel, le Light Crystal Malt (150 EBC) rejoint nos rangs. Les sucres cristallis\u00e9s lui conf\u00e8rent une intense saveur de caramel et une teinte rouge\u00e2tre. Ce malt correspond particuli\u00e8rement bien aux bi\u00e8res bitters.<\/p>\n\n\n\n

Un autre nouveau bien pratique pour les bi\u00e8res \u00e0 faible gravit\u00e9 sera le Dextrin Malt (35 EBC). Il s’utilise un peu comme le Carapils dans la mesure ou il va venir am\u00e9liorer la tenue de mousse. Au del\u00e0 de \u00e7a, ses dextrines vont apporter du corps et de la rondeur \u00e0 la bi\u00e8re sans ajouter trop d’alcool.<\/p>\n\n\n\n

Concernant les malts de base, s’ajoutent le Best Ale Malt (6EBC) et son d\u00e9riv\u00e9 Extra pale malt (3 EBC) parfaits pour les lager ou pour mettre en avant les houblons.<\/p>\n\n\n\n

Les originaux<\/h3>\n\n\n\n

Enfin, certains malts de chez Crisp ne pr\u00e9sentent aucun \u00e9quivalent chez les autres malteries.<\/p>\n\n\n\n

Le Chevalier Heritage Malt (6 EBC) malt\u00e9e de fa\u00e7on traditionnelle. Il a \u00e9t\u00e9 la premi\u00e8re vari\u00e9t\u00e9 locale s\u00e9lectionn\u00e9e dans la malterie originale d\u00e8s 1870. Vari\u00e9t\u00e9 reine de l\u2019orge anglaise de 1820 \u00e0 1920, elle offre un cot\u00e9 malt\u00e9 profond encore plus intense que celui d\u2019un Maris Otter.<\/p>\n\n\n\n

Le Plummage Archer Malt (4 EBC) est pour la malterie, la premi\u00e8re orge obtenue par croisement \u00e0 \u00eatre commercialis\u00e9e. A l\u2019instar des premi\u00e8res IPA, ce malt sera l\u2019alli\u00e9 id\u00e9al au caract\u00e8re audacieux des houblons fruit\u00e9s et aromatiques.<\/p>\n\n\n\n

Et Enfin, le No 19 Maris Otter Malt (6EBC). Malt\u00e9 de fa\u00e7on traditionnelle, il en r\u00e9sulte une saveur plus profonde que le Maris Otter touraill\u00e9 de mani\u00e8re plus conventionnelle.<\/p>\n\n\n\n
