Scotland is famous for its malty, strong ales. This yeast can reproduce complex, flavourful Scottish-style ales. This yeast can be an everyday strain, similar to 'California Ale Yeast'. Hop character is not muted with this strain, as it is with 'English Ale Yeast'. Suitable for Scotch-style whisky and bourbon.

Fermentation temperature: 18°-21°C (65°-70°F)
