Weyermann dark wheat malt
Dark wheat malt is relatively similar to light wheat malt. Its higher degree of boiling gives it a darker color and slightly more pronounced cookie flavors. Its aromatic panel gives notes of bread, honey, toffee, caramel and a hint of vanilla.
Its high protein content is a major contributor to good foam retention and a pleasantly creamy texture. Dark wheat malt is historically the signature malt of Bavarian Dunkelweizen. That said, it will fit in perfectly with any top-fermented or bottom-fermented wheat beer.
Traditionally, its percentage of use is lower than that of light wheat malt. However, its transformation rate means that up to 50% dark wheat malt can be used in a recipe without filtration problems.
