Weyermann® rye malt
Weyermann® rye malt will be a great ally in bringing a spicy, malty complexity to your beers. It's ideal for saisons, but also for stouts, IPAs... In short, it's a very versatile malt. This malt will bring notes of bread, pepper, cookie and spices.
Its transformation rate means you can use a high percentage without filtration problems, since the most adventurous among you will be able to use up to 80% of a recipe. Its degree of boiling and its proteins will add a lovely coppery color and a slight cloudiness to your beer.
The protein content of rye malt also plays an important role in foam retention. In small percentages, it will be a superb asset to the appearance of your beers.
