Description
N°19 Maris Otter malt
Malt N°19 is a variety of Maris Otter grown less than 40km from the malt house. In addition to its local character, it benefits from a special malting process, as it is made the old-fashioned way, on the floor, with gentle kilning over 3 days. This traditional, longer malting gives this grain deeper malty flavors than a standard Maris Otter. Its main aroma is of bread, complemented by sweet notes and a return to cereal on the finish.
It has the same enzymatic characteristics as standard Maris Otter and will bring the same color to the beer. N°19 is ideal for beers where the malt is to the fore. A Barley Wine made with 100% of this malt is also possible.
