Description
LalBrew NovaLager™ is a true bottom-fermenting hybrid Saccharomyces pastorianus yeast selected to produce pure lager beers with typical flavors and superior fermentation performance.
LalBrew NovaLager™ is a robust lager strain with ideal characteristics for lager production. Its characteristic organoleptic profile is very pure with light esters over a wide temperature range.
LalBrew NovaLager™ was selected using conventional, non-GMO breeding methods to obtain a new Saccharomyces cerevisiae x Saccharomyces eubayanus hybrid strain that defines a new lager line. This strain is a low VDK/diacetyl producer and utilizes a patented technology from the University of California Davis (USA) that inhibits the production of hydrogen sulfide (H2S), thereby reducing the maturation time associated with lager production.

Classified as Saccharomyces pastorianus, bottom-fermenting yeast.
Percentage of solids: 93% to 97%.
Viability: ≥ 5 x 109 CFU per gram of dry yeast.
Wild yeast: < 1 per 106 yeast cells

Fermentation properties:
In a wort at 12°C, LalBrew NovaLager™ exhibits: A vigorous fermentation that can be completed in 6 days.
High attenuation and medium flocculation.
Aromas and flavors are pure with light to medium esters, no sulfur. This strain is POF negative.
The optimal temperature range for LalBrew NovaLager™ is 10-20°C for traditional styles.
Lag time, fermentation time, attenuation and flavors depend on seeding rate, seeding methods, fermentation temperature and nutrient qualities of the wort.
Seeding rate : 50 to 100g/HL.
Alcohol tolerance: 13%.
