ARL Southern Lager Yeast

Strain harvested in Arlington, Virginia (USA)

ARL™ is the flagship lager strain and the very first cultivated by Bootleg Biology.

This culture has an extremely clean profile at 10°C (lagers) and 15°C (Kolsch and lager hybrids such as Cold IPAs). It can produce slight citrus esters in the higher fermentation range (20°C). It may produce a little sulphur during primary fermentation, but this will be eliminated within a few weeks (allow for longer ageing if fermentation takes place at a low temperature). ARL is very attenuating and produces a dry beer.

Practical information:

  • Type: Saccharomyces pastorianus.
  • Inoculation rate : Directly injectable into 20 litres of must at 1.050 or less. We still recommend a small starter.
  • Estimated attenuation: 88%-93%.
  • Estimated final pH: 4.4-4.6
  • Aroma profile: Clean, malty, bread, light citrus.
  • Flocculation: High
  • Recommended fermentation temperature: 12-20°C
