Description
Weyermann Pilsner Malt
Pilsner malt is the basic malt par excellence. This well-balanced grain presents aromas of cereals, bread dough and bread, with a hint of honey.
Pilsner malt is undercooked, giving it a pale color and very light malty aromas. This low level of cooking allows it to retain all its enzymes, which in turn enable optimum sugar conversion for the yeasts.
When pilsner malt is used at 100%, the low boil of the grain gives the beer a pale, blond color. Its protein content also produces a nice head.
Its rather neutral character makes it a very versatile grain. Traditionally used in most Belgian, Czech and German beers, it will perfectly enhance the hop aromas of an ipa or the spicy yeast of a saison, for example. It's also the ideal ingredient for a Czech pilsner.
Thanks to its husks, pilsner malt also has good filtration properties.
