This beer stood out among the 180 other recipes in competition.

Sébastien obtained a final score of 87/100 from a panel of recognized experts such as Thomas Barbera (Happy Beer Time); Antoine Blain (Teacher at IFCO and founder of Brewing Bears) and Joan Ribera (Big Boss of Rolling Beers)!

"The goal was to make a grapefruit juice without grapefruit, with acidity (Philly Sour), color (Hibiscus), aroma (Timut pepper), and taste (passion fruit and mango). The aim is to remind you of "something you know but can't define", a kind of trompe l'oeil for the mouth."

"For the water profile, I boost the chlorides to have a NEIPA-type "mouthfeel" but in a very different style. For the pH, I aim for 5.3."

  • 2.75kg of Light Wheat Malt
  • 2kg of Pilsner Malt
  • 0.2kg of Oat Flakes
  • 40g of Simcoe hops
  • 2 packets of Philly Sour
  • 1kg of Mango Puree
  • 1kg of Passion Fruit Puree
  • 1kg of lactose

  • 8g of Timut pepper
  • 140g of hibiscus flowers
