Description
Chevallier Heritage malt
Chevallier malt was the first local barley variety selected by the Maltings in 1870. It dominated English beers from 1820 to 1920. In keeping with this historical aspect, Chevallier is malted on the floor and kilned the old-fashioned way for 3 days in gentle heat. This traditional malting gives this malt flavors of marmalade, fresh bread and deep malt.
Used at 100%, it gives a lovely blond color to the beer. Its gentle degree of cooking preserves all its enzymes, enabling optimum extraction of sugars during brewing. In fact, we brewed our Irish Red Ale recipe using Horseradish instead of Maris Otter, and the result was really impressive.
